iEat Green Shares Interview with Robert Lee, Co-Founder of Rescuing Leftover Cuisine

My guest was Robert Lee, the co-founder of Rescuing Leftover Cuisine, Inc., a non profit food rescue organization, operating in 16 cities and headquartered in New York City. Did you know that 40% of the food we produce in this world ends up in landfills? It’s not only a waste of the food that is the problem, but it is all of the natural resources that goes into producing that food, such as land use, water, labor and transportation, not to mention the green house gas emissions that comes from producing that food. Rescuing Leftover Cuisine offers many services to it’s partners, in addition to collecting their leftover food. They provide the resources needed to help the food establishment receive tax credit for the food they donate, along with food waste consulting and co-branding.

Food waste is an issue that has been getting a lot of attention lately, because it is actually an issue that we can all do something about! Here are a few suggestions Robert shared with all of us; Think about the food you buy and don’t purchase more than you can eat; don’t shop while hungry; label, date and freeze your leftovers for another day; and share your leftovers with others!

And of course you can volunteer with Rescuing Leftover Cuisine, and help get the leftover food to places where it will be appreciated and not go to waste!
