Ingredients:
1 large head Romaine lettuce, chopped
2 cloves garlic
4 anchovy fillets
1 Tbsp Dijon Mustard
2 lemons, juiced
1 Tbsp chopped parsley
½ cup extra virgin olive oil
¼ cup Parmesan cheese
1 package of Gluten Free Croutons
Fresh ground black pepper
*Make it Vegan!:
- Substitute 1 Tbsp of capers for anchovy fillets
- Substitute 2 Tbsp Follow Your Heart Parmesan Style Vegan Cheese & 2 Tbsp Nutritional Yeast for 1/4 cup Parmesan Cheese
Directions:
- Wash, cut and spin lettuce.
- In food processor, pulse the anchovies and garlic.
- Add the lemon juice, mustard and parsley. Pulse some more.
- With the food processor running, Add the Olive oil in a drizzle through the opening in the top.
5. Add the Parmesan cheese and black pepper to taste.
6. Toss with lettuce and croutons right before eating, and enjoy!
