Ingredients
4 cups watermelon, cut into 1” cubes
2 cups Blueberries
1 cup raspberries
1 cup strawberries, cut in half
1 mango, cut into cubes
1 cup cashews, soaked for 3-5 hours, and drained
¼ cup tahini
3 Tbs maple syrup
½ t. vanilla
1 cup water
Juice of 1 lemon
1 bunch of mint, some chopped and some whole leaves for garnish
Directions:
1. Put all of the cut up fruit into a large bowl. Feel free to add other fruit as well.
2. Make the sauce by combining the cashews, tahini, vanilla, lemon juice, maple syrup, and water, in a high powered blender. Puree until very smooth, scraping down sides as necessary.
3. Mix in a little chopped mint, according to your taste.
4. Serve in martini glasses. Fill glass with fruit salad.
5. Drizzle with sauce and garnish with whole mint leaf.
