iEat Green Shares Interview with Kristin Lawless, Author of “Formerly Known As Food: How the Industrial Food System is Changing Our Minds, Bodies, and Culture.”

Hi Everyone,

It’s always a pleasure interviewing someone who’s philosophy is in total alignment with mine, and that is how my interview with Kristin Lawless was. Her book,“Formerly Known As Food: How the Industrial Food System is Changing Our Minds, Bodies, and Culture,is a must read for anyone who is confused as to what foods are really good for us, and what foods to avoid. Her philosophy, “The Whole Egg Theory” is actually quite simple, eat foods that are whole and intact, like the whole egg. When one separates the yolk from the white of the egg, you are removing the most nutritious part of the egg! It’s true that egg yolks are high in cholesterol, but the fat present in egg yolks actually helps to reduce the bad cholesterol and eating the whole egg is a better choice because of all the vitamins and amino acids it contains.

In doing research for her book, Kristin found that after decades of eating the American Diet, 97% of babies born in this country don’t have the gut bacteria necessary to set their immune systems up for life, to protect them from various chronic diseases, cancer and autoimmune conditions. It’s actually quite scary! American’s need to eat less sugar and refined grains, avoid GMO’s, pesticides, and artificial chemicals, while increasing live and fermented foods.
