This morning I had the opportunity of interviewing Jared Koch, the Founder of Clean Plates, for my second time! He joined me on the show in 2011, after he came out with his first dining guide, Clean Plates Manhattan, and now he has just published another book, The Clean Plates Cookbook. The cookbook is divided into 2 parts. The first part explains Jared’s philosophy, which he breaks down into 5 precepts, starting with what he calls Bio-Individulity, which basically means listening to your own body, and determine what is right for you. Then, the second precept is paying attention to the quality of the foods you use, how it is grown, produced, marketed etc. The third precept is to eat mostly a Plant Based Diet, the fourth is to eat less animal products, but when you do, make sure they are sustainably raised, organic or at least hormone and antibiotic free. The last precept is the most obvious, but one that so many people have a problem with, and that is to cut out, or reduce, processed foods from your diet. If you follow these 5 steps, you will definitely be on the right track to feeling better. The second part of the book is the recipe section, which, just like his dining guide, has little icons on each page that says if the recipe contains meat, dairy, or gluten, and whether is is raw, sweet, vegan, vegetarian or omnivore friendly. To hear more about Jared’s philosophy and Clean Plates, please listen to the show.
