Caesar Salad & Dressing

Ingredients:

1 large head Romaine lettuce, chopped

2 cloves garlic

4 anchovy fillets

1 Tbsp Dijon Mustard

2 lemons, juiced

1 Tbsp chopped parsley

½ cup extra virgin olive oil

¼ cup Parmesan cheese

1 package of Gluten Free Croutons

Fresh ground black pepper

*Make it Vegan!:

  • Substitute 1 Tbsp of capers for anchovy fillets
  • Substitute 2 Tbsp Follow Your Heart Parmesan Style Vegan Cheese & 2 Tbsp Nutritional Yeast for 1/4 cup Parmesan Cheese

Directions:

  1. Wash, cut and spin lettuce.
  2. In food processor, pulse the anchovies and garlic.
  3. Add the lemon juice, mustard and parsley. Pulse some more.
  4. With the food processor running, Add the Olive oil in a drizzle through the opening in the top.

5. Add the Parmesan cheese and black pepper to taste.

6. Toss with lettuce and croutons right before eating, and enjoy!
