iEat Green Celebrates Art, Milestones, Passover and Spring; Kelly McGlinchey from Butter Beans Joins Bhavani on PRN

Hi Everybody,

This week started off on a high note, with the opening of The South Asian Women’s Creative Collective’s (SAWCC) 20th Anniversary Exhibition, ‘Archival Alchemy’, curated by my daughter, Saisha Grayson, at the Abrons Art Center in New York City. It’s a great show and it will be going on until May 10th, with a curator’s tour scheduled for April 27th. I was so happy to be able to provide some treats for the opening reception, and support the work of many artists addressing the political landscape of our time.

This week, I also celebrated a milestone birthday, and was surrounded by family, friends and community. I am constantly in a state of awe and appreciation for the people in my life and the blessings that surround me. A big ‘thank you’ to everyone that enriches my life. You feed my soul with your love, and I love you back!

And then it was Passover, our annual family gathering to tell the story of the Jews exodus from Egypt, around our communal table. There are many traditional foods which we associate with the holiday, such as Potato Latkes and Matzo Ball Soup, but there are variations you can make to accommodate different dietary choices. I have a great recipe for Potato Latkes that are vegan, and I make a delicious Vegetable Miso Soup for my Matzo Balls. I even made some Gluten Free Matzo Balls this year! My Passover Seder is heavy on the vegetables, but I still make my Gefilte Fish Loaf, hard boiled eggs in salted water (to represent the tears of slavery), Choroset (a mixture of chopped apples, nuts and wine, to represent the mortar the slaves used) and of course matzo, the unleavened bread we eat to remind us that the Jews didn’t have time for the bread to rise during the exodus. But the best part of the Seder, is everyone being together, enjoying the company of family and friends, with good food, wine, laughter and love.

Certified in permaculture design, Kelly has worked in gardens in South Africa, the Bahamas, Thailand, and Australia, and savors any opportunity to get her hands in the soil.
