iEat Green Invites You to Join Our Zoom Cooking Class Tonight at 6pm! Emily Jackson, Founder and Director of Growing Minds Joins Bhavani on PRN!

Come explore the world of vegan cooking with iEat Green’s Zoom Cooking Classes! Tonight we will be focusing on appetizers!  Join Bhavani and “Let’s Cook Some Great Food Together!”  from 6-7pm!

Tonight we will be making a Georgian Radish Green Paté, Garlic Hummus, Avocado Mango Sushi Rolls, and other Assorted Vegetarian Rolls. The Radish Green Paté can also be made with Beet Greens or Dandelion Greens or even Arugula. I used to throw out the tops of my radishes and beets, but not anymore!! These are great recipes to get the party started, although you can certainly make your whole meal out of the sushi!

Beginning at 6pm, EST, we will chop, cook, drink, and have fun, while getting our sushi dinner on the table! Please sign up, so I can send you the recipe ahead of time, and you can have most of the ingredients on hand. The recipes are flexible, so if you don’t have all of the ingredients, you can substitute something else or leave it out.

My guest this week on the Progressive Radio Network is Emily Jackson, the founder and director of Appalachian Sustainable Agriculture Project‘s (ASAP) Growing Minds Farm to School program.

Growing Minds was one of the first farm to school programs in the country and a pioneer in farm to early childcare and education as well. Emily also served as the National Farm to School Network’s Southeast Regional Lead for nine years and currently co-facilitates the North Carolina Farm to Preschool Network. She lives in the beautiful mountains of Western North Carolina with her husband, one dog, two cats, and a varying amount of chickens. Emily aspires to write a children’s book and believes deeply that every child should have the opportunity to grow a garden.

As a fellow Farm to School educator, I am really excited to have Emily Jackson joining me on my show, so we can hear how her program got started, how it has expanded, and how it impacts the children it serves. I hope you can join us!
