For people like me who love to entertain and feed people, this Covid19 pandemic has really put a damper in my style. I am very thankful to be able to connect with my friends and community through Zoom! It brings a bit of normalcy to my life! Therefore, iEat Green has extended our weekly Wednesday nights, “Let’s Cook Dinner Together” cooking classes on Zoom. Tonight we will be making Coconut Encrusted Tofu with Mango Salsa, along with Quinoa Tabouli. This is a great recipe for the warmer weather, and outdoor dining!
Beginning at 6pm, EST, we will chop, cook, drink, and have fun, while getting dinner on the table! Please sign up, so I can send you the recipe ahead of time, and you can have most of the ingredients on hand. The recipes are flexible, so if you don’t have all of the ingredients, you can substitute something else or leave it out.
Starting tonight, the time for our cooking class will begin at 6pm!

Kristin Lawless is the author of; Formerly Known As Food: How the Industrial Food System Is Changing Our Minds, Bodies, and Culture, which won the Green Prize for Sustainable Literature in 2019. Kristin is an independent journalist focusing on the intersections of food, health, politics, and culture. Her journalism and columns have appeared in The New York Times, The Atlantic, Newsweek, and VICE. Lawless is also a Certified Nutrition Educator and lives with her husband and son in California.
I am really excited to have Kristin join me on my show to share with us her research on processed foods, industrial agriculture, and how it is effecting our health and our immune system. Please join us on Thursday for a discussion about food, real food, not fabricated ‘food like’ substances.
