Today I had a great interview with Matthew Prescott, author of the new book, Food Is the Solution: What to Eat to Save the World. Matthew did an amazing job in combining two books into one. One part an is an in depth look at the environmental impact that our food system has on the planet, and the other half is a cookbook, with many
great plant based recipes for you to enjoy. The recipe I shared this week is straight out of his cookbook, Rice Paper Bacon. It’s amazing!
Some of the facts in this book might surprise you, like the fact that the average American eats 108 lbs of chicken per year, up from 34 lbs. in 1960. That’s a 215% increase!! Or the fact that 1/3 of the planets land is used to produce animals, whether for grazing, housing, growing their food, or dumping their waste. The facts on the health benefits of eating a more plant based diet, are just as amazing. A plant based diet can reverse heart disease, the number one killer in America, along with diabetes, cancer, strokes, and most other chronic diseases. It’s really very simple. Reduce your meat intake and eat more plants! People, and corporations, like to make it sound complicated, but it’s not! I highly recommend getting this book, and read it from cover to cover!
