iEat Green’s Interview with Dr. Elise Golan from the USDA

Elise Golan is the USDA’s ( U.S. Dept. of Agriculture) Director for Sustainable Development, and she has been working on the logistical problems and solutions in dealing with our countries food waste. We had a great interview, focusing on the the work around Food Waste, and the programs they have set up to address the problem. Unlike so many of the issues around food, Food Waste is one problem that we all can really help to combat, just by becoming more aware of the problem, and doing our part to reduce the waste in our kitchens. Did you know that 1/3 of our food supply is wasted annually? That adds up to 133 billion lbs. of food, with a net worth of $162 billion dollars. And all of the resources that goes into producing that food is also being wasted, like the water, labor costs, transportation costs etc. To help people in reducing the amount of food they waste, Dr. Golan suggested we all check out the website ChoosemyPlate.gov, and go to the info graphic Let’s Talk Trash, where you will get tips on things you can do to reduce the amount of food you waste. I know I am really trying to become more conscious of using everything in my fridge before it goes bad, even if that means making something and freezing it, or pickling something before it goes bad.
