Yesterday, I had a wonderful interview with Jonathan Cetnarski about his new role at the Natural Gourmet Institute (NGI), and how his past experience in business is informing and expanding the future decisions at Natural Gourmet Institute. For those of you unfamiliar with the NGI, it is the only cooking school that I know of that puts health, sustainability, nutrition and taste at the forefront of their philosophy. 80% of the classes they offer are plant based, and as a result, they attract people who are vegetarians and vegans, as well as people who care about our current food system. Most of their students are career changers, people who want to be private chefs, bloggers, restaurant entrepreneurs, or food justice advocates. In addition to their full time and part time Chef Training Course, they also offer Certificate Programs and Recreational Cooking Classes. Jonathan is also using his expertise in making connections with other institutions in the city, so that the Natural Gourmet Institute can become a consultant in helping them improve their cafeterias and food offerings to workers and the public.
