Recipe: Ginger Beet Salad

Ingredients
- 6 Beets
- ? red onion, sliced in half and then paper thin slices
- 4 Tbs white wine vinegar
- 1 teaspoon grated ginger
- Orange Juice
- ? cup Olive Oil
- Cilantro or Parsley
- Salt and Pepper to taste
Instructions
- Boil beets for 20-30 minutes.
- Peel with hands and dice into small bite size pieces.
