Kid-Friendly Butternut Squash Soup

Ingredients
- 1 Onion, chopped
- 3 carrots, chopped
- 1 Butternut Squash, peeled, seeded and cubed
- 2 Tbs coconut oil
- 2 potatoes, cubed
- 3Tbs grated ginger, more if desired
- 1 t. salt
- 1 can coconut milk
- 2 Tbs maple syrup (optional)
- ? t. cinnamon
- ? t. nutmeg
- ? t. thyme
- 4 cups water
Instructions
- In large stock pot, saut? the onion, carrot, squash, potato and ginger. Cook for 10 minutes.
- Then add the water and bring it to a boil.
- Reduce the heat to simmer and add the salt, cinnamon, nutmeg and thyme. Let cook for 30 minutes.
- Then puree the soup until smooth.
- Add the maple syrup, and coconut milk.
- Return to heat and simmer for 10 more minutes.
- Adjust salt to taste.
