Hey Everyone,
Here is a yummy and easy dinner that is super light for the summer. Zucchini replaces your wheat pasta, which makes it low carb and very refreshing. You can make the sauce as thick or as thin as you want by decreasing or increasing the water in the dressing. You can always add some more veggies to it if you want but these are the ones I used. Enjoy!
- 1 zucchini, spun into strands or shredded
- 1 carrot, spun or grated
- 1 green pepper
- ⅓ cup scallions
- ¼ cup chopped parsley
- 2 Tbs. chopped cilantro
- ½ cup raw peanuts
- Dressing
- ¼ cup peanut butter
- ½ t. chopped garlic
- ¼ cup water
- 1 Tbs. tamari
- 1 Tbs. Mirin
- 1 Tbs. dark sesame oil½ t. salt
- 1 t. hot sesame oil
- 1 Tbs. white wine vinegar
- In large bowl, combine the zucchini, carrots, green pepper, scallions, parsley, and peanuts. Make the dressing by combining all of the ingredients in a mini Food Processor. Toss over vegetables and garnish with the cilantro.
