Recipe: Vegetable Fried Rice

Ingredients
- 2 cups organic short grain brown rice
- 4 cups boiling water
- 1 organic GF bouillon cube
- ? teaspoon salt
- 1 Tbs olive oil
- 1 small onion, chopped
- 2 carrots, small dice
- 4 cloves garlic, minced
- 1 Tbs grated ginger
- 1 bok choy, chopped
- ? head of broccoli, cut into small florets
- 1 cup snow peas
- 5 eggs, beaten
- ? cup frozen organic peas
- ? cup frozen organic corn
- 2 Tbs. tamari
- 2 t. dark sesame oil
- 1 Tbs. mirin
- sesame seeds for garnish
Instructions
- In a heavy saucepan, combine the rice, salt, water and bouillon cube. Bring to a boil, cover and lower heat to a simmer for 40 minutes.
- Meanwhile, saut? onions and carrots in olive oil with garlic and ginger for 5 minutes. Add the broccoli.
- Add the eggs and scramble with the vegetables
- Add the bok choy, snow peas, corn, and peas.
- Add the rice, tamari, mirin. When all mixed, add the dark sesame oil.
Step-By-Step Instructions
In a heavy saucepan, combine the rice, salt, water and bouillon cube. Bring to a boil, cover and lower heat to a simmer for 40 minutes. Meanwhile, saut? onions and carrots in olive oil with garlic and ginger for 5 minutes.
Add the broccoli.
Add the eggs and scramble with the vegetables.
Add the bok choy, snow peas, corn, and peas.
Add the rice, tamari, mirin. When all mixed, add the dark sesame oil.
Serve and enjoy!
