Thai Cucumber Salad
Ingredients:
4 cucumbers
1 teaspoon salt
½ cup sugar
½ cup rice vinegar
1 lime
2 jalapeño peppers
¼ cup chopped cilantro
½ red onion, thinly sliced
½ cup peanuts
2 Limes
Step-by-step Instructions:
Toss the cucumbers with 1 teaspoon salt and let drain for 30 minutes.
In a small saucepan, dissolve the sugar in the vinegar.
Make a dressing with the sugar, vinegar, lime juice, and cilantro.
Toss well and refrigerate for 2 hours.
